Pumpkin Smoothie...

Happy Halloween! Just in case you are loving all things pumpkin like me, I want to share with you a recipe for a Pumpkin smoothie! Did you know that pumpkins are low in cholesterol and calories,  yet rich in dietary fiber and certain vitamins, especially A, C, and E? So you see, you really can't go wrong with loving this vegetable. 

I'm a fan of smoothies because they are easy and quick to make...and quite healthy. In the summer I often make berry smoothies and freeze them. but the local berries are long gone and I was in the mood for a smoothie after my run in the rain this morning. 

After glancing at several recipes online, here are the ingredients I used in my smoothie. I almost always have a couple of frozen bananas in the freezer since I throw them in there when they get too ripe.

Pumpkin Smoothie

1/2 frozen banana

1/2 cup pumpkin puree

3/4 cup light coconut milk

1 (6 oz) carton vanilla flavored green yogurt

1/2 tsp. pumpkin pie spice

dash of ginger

5 to 6 ice cubes

Blend in the blender for a few seconds...and there you have it! 

I will admit that the pumpkin smoothie is not quite as sweet as berry smoothies. I wish I would have had a can of heavy whipped cream on hand to squirt on the top...just for a touch of sweetness. If you decide to try it, let me know what you think or if you tweak the recipe at all. The thing about smoothies is, there is no precise formula so recipe "tweaking" is certainly allowed!

I'm heading over the Stevens Pass soon...there was actually snow in the mountains last weekend! Hard to believe it is the end of October already. I turned on the radio today to a local station and heard a Christmas carol playing....so, so wrong! I promptly switched stations. We still have all of November ahead of us to focus on Thanksgiving.
